As we all know, college is ex-pen-sive! And like most people I love food, which is also quite expensive! We all know and love the classic “living off of Ramen Noodles” routine all too well and, you know what, I think we can do better! Over the past year, I have come across amazing recipes for dirt cheap. I’ve also found some severely dreadful ones. To save you the trouble, and money wasted, I’ve comprised a go-to meal plan for the day when your pockets are tight and your belly is hollow.
Chicken and Bacon in Puff Pastry
You will need 4 slices of bacon, 1 tablespoon olive oil, 3 boneless, skinless chicken breasts (cubed),1/2 cup chopped onion,1 (3-ounce) package cream cheese (softened),1 sheet frozen puff pastry (thawed), and 1 egg (beaten).
This meal is fairly simple to make. First you will fry your BACON (capitalized because its awesome!), next you want to cook your chicken in the pan that you fried the bacon, along with the onion. Once both meats are cooked thoroughly, you need to add cream cheese to the bacon and chicken mixture and mix them well. Roll out your puff pastry and cut them into 6 inch squares. Divide the meat mixture onto the pastries, fold in half, seal the edges with a fork, bake for 25 minutes at 400 degrees and Voila! Breakfast for four for less than 7 bucks!
Grilled Chicken and Apple Sandwiches
All you will need for this delicious recipe is12 ounces canned chicken (drained),1/2 cup mayonnaise,1 tablespoon lemon juice, 1-1/2 cups grated Swiss cheese, 2 stalks celery, chopped, 1 apple, finely chopped, 1/2 cup grated carrot, if desired, 12 slices whole wheat bread and 2 Tbsp. butter.
I personally love this sandwich! It takes 10 minutes to prepare. So if your starving in between classes, this should be your choice. Just combine your chicken, celery, apple and carrot in a small bowl and season to taste. spread butter in the outsides of your sandwiches and grill the sandwiches, covered, on medium heat until the cheese melts and your bread is golden brown. This recipe serves 6 people and is under 10 bucks.
So, I don’t know about you, but I always seem to have a lonely box of cake mix in my pantry. This recipe makes brownies, yes I said brownies, out of boring old cake mix!
What you’ll need is 1 tsp Crisco, 1 box of chocolate cake mix (with pudding in mix), 4 eggs, 1/2 cup of oil and 3 tbsp. warm water. What you need to do is easy as pie! (or cake in this case).
Grease the bottom of a 9X13 inch cake pan with Crisco. Dump the cake mix directly into pan. Put the 4 eggs into the mix and beat with a fork. Add oil and water and stir with fork until well mixed with no lumps. Bake at 325 degrees for 20-30 minutes until the top is nice and shiny. Cool completely, ice and serve. Yum!
So there you go folks. Three recipes under 10 bucks! Not to mention that they are amazingly delicious!
